Chocolate Zucchini Bread |
4 eggs
1 cup vegetable oil
2 cups sugar
2 tsp vanilla
3 cups zucchini, grated
3 cups flour
1 tsp baking soda
11/2 tsp baking powder
1/2 cup cocoa
3/4 tsp salt
Beat eggs. Add oil, sugar and vanilla. Stir in zucchini. Set mixture aside. Sift flour, baking powder, baking soda, cocoa and salt together. Add dry ingredients to zucchini mixture. Pour into 2 8x4" loaf pans or 1 9x5" loaf pan (well greased). Bake at 350° for 1 hour. Allow to cool completely.
